White Grenache 20%
Harvest selective sorting. Destemming with new generation destemmer (Oscillys from Bücher) then crushing. Direct pressing with pneumatic press. Separation of pressed and free-run juices (after tasting). Cold static settling for a minimum of 48 hours. 3 weeks mono varietal fermentation in stainless steel tanks (temperature of 15°C).
Terroir : clay and limestone soils facing south/south-east, located at the bottom of Luberon mountain. Aging: stainless steel tanks aging over fne lees until Christmas. Clarifcation by racking and fltration before bottling
A concert of aromas whose orchestra is composed of fresh fowers, citrus fruits, white peaches and pears. Te symphony is very intense from the frst measure and tempered by notes of quince and honey that bring generosity to the nose. In the mouth, the attack is sweet and graceful. Te aromatic intensity rises crescendo to reach its climax in the middle of the mouth before giving way to roundness and a very nice length.
Contrasting with some heavy white, this wine is above all digestible and fresh. It will be perfect for summer dishes such as grilled or pickled fsh, sun-kissed vegetables or a nice plate of fresh goat’s cheeses. In winter, it will allow you to sublimate seafood platters, foie gras or risottos in sauce.
