Sharvest selective sorting. Destemming with new generation destemmer (Oscillys from Bücher) then crushing. Direct pressing with pneumatic press. Separation of pressed and free-run juices (after tasting). Cold static settling for a minimum of 48 hours. 3 weeks mono varietal fermentation in stainless steel tanks (temperature of 15°C).
Clay and limestone soils facing south/south-east, located at the bottom of Luberon mountain. Aging: stainless steel tanks aging over fne lees until Christmas. Clarifcation by racking and fltration before bottling.
A beautiful garden composed of very different, bright, nuanced, subtle scents, for a very complex nose: slight citrus notes, vivacity of small red berries, freshness of strawberry and finesse of rose and lychee. The intensity of the perfumes is found in the mouth with a frank attack, without concession. The mid-palate offers many variations, fruit explosion sensation with a lot of liveliness and freshness. The finish is long and saline.
