WINE MAKING

Organic farming, certified by Ecocert.
No chemical fertilizer, no weedkiller, add manure every year short pruning.
Two disbudding runs.
Green harvest in some part of vineyard.

Strict selection of grapes by grape variety.
Stalking, fulling, gravity vak in oak casks of 30 and 40 hl or in concrete tank.
Natural yeasts.
Daily punching down or pumping over and temperature regulation.
Gravity devatting and pneumatic pressing. Separation of drop and press juices.

TASTING

The dress is ruby’s colour.

The nose brings out notes of red fruit and jammy black fruit (cherry, blackberry, blackcurrant) and on spicy notes (ginger, vanilla) with a hint of mint.

The mouth is balanced and structured around still firm tannins. Spicy notes dominate, like pepper, ginger and cinnamon. The end gives an impression of power with a nice length and a feeling of freshness. A wine to drink now, with a good aging potential.

PAIRING

The Traversée 2016 is the ideal wine for convivial meals. Very good pairing with tagine of lamb, duck breast, braised beef.
